I just made one salad, so I’m not going to list the amounts for each ingredient… You can figure that out based on how many people you’re feeding 😉
Ingredients for the Southwestern Grilled Chicken Salad
shredded cheddar cheese
boneless skinless chicken breast
salt and black pepper
Ingredients for the Creamy Jalapeno Dressing
This dressing is amazing… Creamy, spicy, fresh… I bet it would be great with some raw carrots or celery! Just toss all the ingredients in a food processor or blender, and refrigerate for several hours to let the flavors blend.
1/2 c cream cheese
1/4 c plain Greek yogurt
1/4 c buttermilk
1 fresh jalapeno, coarsely chopped
1 clove garlic
2 green onions
1/2 c fresh cilantro
salt and pepper to taste
How to make this grilled chicken salad look pretty:
Maybe you’re making individual salads or maybe a large one that you’ll divide to serve to several people. Either way, there are a couple of advantages to arranging as you see in the photo above.
First of all, any salad with brightly colored beautiful ingredients like this one will just make a bigger visual impact when the different elements are grouped together. Whether it’s on an individual plate or in a large bowl it can be tossed right before serving.
