Pan drippings White wine Half and half Flour Cajun or Creole      seasoning Dried oregano Smoked paprika Lemon juice

Deglaze pan where protein (fish, chicken or shrimp) has been cooked with wine.

Blend with a whisk the half and half, flour and seasonings until smooth.

Whisk flour mixture into skillet and stir constantly over medium-low heat until thickened.
