Heat oil on stove top. Add chicken & sausage and cook until chicken is done.
Add onions, celery, bell pepper and garlic and cook about 8 minutes.
Add rice, stock, tomatoes and seasoning.
Bring to a boil and then cover and simmer for 15 minutes.
Before serving remove bay leaves and garnish with parsley or green onions.
