INGREDIENTS: Butter Bananas Carrots Self-rising flour Eggs White & Brown sugar Vanilla Cinnamon

STEP 1

Mash the ripe bananas, grate the carrots and set aside. Cream the butter at low speed.

STEP 2

Add the sugars and cream 1 minute. Add bananas, eggs and vanilla and mix 1 minute.

STEP 3

Fold in the flour, cinnamon and grated carrots.  Fill muffin tins about 3/4 full.

STEP 4

Bake at 350 degrees for 18-20 minutes.
