Quick Pickled Asparagus

Pickled Asparagus are perfect to add to a charcuterie board, give as a hostess gift, garnish a bloody mary or just for snacking.  No canning required.

Besides the asparagus you'll need just a few simple ingredients. 

Step 1

Make the pickling solution and set it aside to cool while you prep the asparagus

Step 2

Snap the ends off the asparagus where it breaks naturally. 

Step 3

Trim all spears to be the right length for your jars.

Step 4

Blanch the asparagus in boiling water for 30 seconds to 1 minute.  Then plunge into ice water. 

Step 5

Add asparagus to jars then add remaining ingredients. Pour the brine solution over all.  

Step 6

Cover tightly and refrigerate for at least one day before serving.
