This watermelon salad with blueberries and feta cheese is not only delicious, but it is perfect for Memorial Day weekend or the 4th of July!
Cut the watermelon into 1-inch cubes. Peel the cucumbers, then cut in half lengthwise and slice into 1/2-inch pieces.
Zest your limes, then juice them. In a small bowl, combine the lime juice, half the zest, olive oil, salt, and pepper.
Toss watermelon, blueberries, and cucumber together in a large bowl. Sprinkle with feta cheese.
Just before serving, drizzle with dressing and top with remaining lime zest.
