Sweet Potato Butter

Sweet potato butter makes great holiday gifts and is perfect for slathering over biscuits, toast, or your favorite bread.

- 3 cups mashed sweet potatoes
- 1-½ cup unsweetened apple juice
- ¼ cup dark brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon ground cloves
- ¼ teaspoon ground ginger
Combine all ingredients in a saucepan over medium high heat. Simmer, stirring frequently, until liquid is mostly absorbed, about 15 minutes.
If lumps remain, blend in a food processor until smooth. Be sure to vent so steam can escape!
Store in an airtight container, refrigerated for up to one week, or divide between 4-8 oz. sterilized jars and can to give as gifts.
- Bake and then mash sweet potatoes or buy pre-cooked and mashed if available.
- Light brown sugar can be substituted for dark brown.
- Sweetened apple juice can be used, but if so, reduce the amount of brown sugar in half.
