This Greek Salmon is seasoned and baked, then topped with all of your favorite mediterranean flavors. This will quickly become your go-to salmon recipe!
Stir together tomatoes, ½ teaspoon salt, ½ teaspoon black pepper, oregano, dill, garlic, olives and capers. Set aside.
Pat salmon dry with a paper towel. Brush with olive oil and sprinkle with remaining salt, pepper and paprika.
Place salmon in baking dish that has been sprayed or rubbed with olive oil. Bake at 400℉ for about 10 minutes, or until slightly less than desired doneness.
Stir feta cheese into tomato mixture and spoon over top of salmon. Return to oven and bake until desired doneness - about 7-12 additional minutes, depending on thickness of fillets.
Serve immediately.
Notes
This recipe is written for two servings, but can easily be doubled or tripled.
Several different herbs may be substitued or added, including basil, parsley, rosemary.
Cook times for salmon will vary according to the thickness of the fillets and the desired level of doneness.
