Yummy Mexican Dip (Low Calories)

Stir together in just minutes and have a delicious, colorful and healthy snack.

  • 1 cup reduced sodium black bean drained & rinsed
  • 1 small can whole kernel corn drained
  • 1 cup diced tomatoes
  • 2 sliced green onions
  • 1 jalapeno seeded & finely diced
  • 3/4 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 lime juiced
  • 1/4 cup cilantro leaves chopped
  • salt to taste
  • pepper to taste


  • Mix together beans, corn, tomatoes, onion and jalapeno.
  • Add remaining ingredients and stir gently.


Slice tomatoes 15-20 minutes before you need them and lay slices flat on plate. Salt lightly. When ready to use drain excess liquid off. This keeps the watery juices from diluting the seasonings.
