Apple Cider Coffee Cake

Apple Cider Coffee Cake is a moist, rich cake that goes perfectly with a cup of coffee or a glass of milk.

  • 2/3 cup mayonnaise
  • 3/4 cup apple cider reduced to 1/2 cup over medium heat
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground allspice
  • 2 teaspoons cinnamon
  • 2 cups all purpose flour
  • 1 teaspoon baking sode
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 3 cups grated apples recommend tart, firm apple like Granny Smith
  • 1 cup chopped pecans
  • 1-1/4 cup powdered sugar
  • 1 Tablespoon butter room temperature
  • 3-4 Tablespoons apple cider


  • Mix all ingredients through vanilla in a large bowl with mixer at medium-low speed until well blended.
  • Stir in apples and 3/4 cup pecans (if desired) with a large spoon until well blended.
  • Bake in 10 inch bundt pan (prepared with cooking spray) at 350 degrees for 35-40 minutes, or until toothpick comes clean.
  • Cool for about 10 minutes and then flip onto serving plate.
  • Whisk powdered sugar, softened butter and 3 Tablespoons apple cider until smooth. Add additional Tablespoon of cider if needed to reach pouring consistency.
  • Pour glaze over cooled cake. Sprinkle with remaining 1/4 cup chopped pecans if desired.
