Apple Cider Coffee Cake
Apple Cider Coffee Cake is a moist, rich cake that goes perfectly with a cup of coffee or a glass of milk.
- 2/3 cup mayonnaise
- 3/4 cup apple cider reduced to 1/2 cup over medium heat
- 3/4 cup sugar
- 1/2 cup brown sugar
- 1/2 teaspoon ground allspice
- 2 teaspoons cinnamon
- 2 cups all purpose flour
- 1 teaspoon baking sode
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 3 cups grated apples recommend tart, firm apple like Granny Smith
- 1 cup chopped pecans
- 1-1/4 cup powdered sugar
- 1 Tablespoon butter room temperature
- 3-4 Tablespoons apple cider
Mix all ingredients through vanilla in a large bowl with mixer at medium-low speed until well blended.
Stir in apples and 3/4 cup pecans (if desired) with a large spoon until well blended.
Bake in 10 inch bundt pan (prepared with cooking spray) at 350 degrees for 35-40 minutes, or until toothpick comes clean.
Cool for about 10 minutes and then flip onto serving plate.
Whisk powdered sugar, softened butter and 3 Tablespoons apple cider until smooth. Add additional Tablespoon of cider if needed to reach pouring consistency.
Pour glaze over cooled cake. Sprinkle with remaining 1/4 cup chopped pecans if desired.
