Hummingbird Muffins have all the flavors of the classic southern cake by the same name.  They’re less sweet, which makes them perfect for breakfast or brunch!

YOU'LL NEED: Butter Eggs Ripe Bananas Sugar Brown Sugar Self-rising flour Coconut Crushed Pineapple Pecans Vanilla

STEP 1

Cream the butter. Add the sugars and cream for 1 minute.

STEP 2

Add banana, eggs, vanilla and mix for 1 minute.

STEP 3

Stir in flour, coconut and pineapple until well blended.  Fold in pecans.

STEP 4

Pour into muffin tins and bake at 375 degrees for about 15 minutes.

If desired drizzle with a simple glaze.
