Fresh Tomato Pie (Crustless)

Tomatoes Salt & Pepper Butter Chopped Onion Garlic Oregano Basil Mozzarella Cheese Eggs

INGREDIENTS:

Step 

1

Slice tomatoes and sprinkle with salt.  Let sit about 30 minutes while preparing the rest of pie.

Melt butter in skillet. Add onions & garlic and saute'. Transfer to a bowl.

Add cheese, eggs, herbs and pepper to the bowl and stir to mix well.

Drain liquid off plate with tomatoes. Pat tomatoes on both sides with paper towels to asorb more of the excess moisture.

Assemble pie by starting with a layer of tomato slices, and about 1/4 cup cheese mixture. Continue alternating layers until all are used, finishing with a layer of tomatoes. Top with more cheese.

Bake at 375 degrees for 30-40 minutes or until edges are lightly browned and center is set.  Let the pie sit 5-7 minutes before serving.
