Melon and prosciutto salad is built on a flavor match made in heaven. Here, that refreshing combination is made into a salad with goat cheese and a balsamic reduction.
Cut or melon-ball the cantaloupe (or honeydew) into bite-sized pieces. Slice the prosciutto into thin strips.
Toss or arrange all ingredients together 1 hour or less before serving. Can be topped with balsamic reduction or a basil vinaigrette.
For the vinaigrette all you need is: Olive oil White balsamic Lemon Basil leaves Salt & pepper
