OVEN BAKED SQUASH FRITTERS

Baked Squash Fritters are a healthy take on a southern classic.  It's a great way to use those fresh squash from the garden or market!

In addition to the squash you'll only need:

Flour Egg Salt & Pepper Onion, Parmesan Cheese and Italian Seasoning are all optional.

STEP 1

Grate the squash, toss it with salt.  Then place in a colander in your sink for about 30 minutes.

STEP 2

Press the squash to get out the liquid. Then put on paper towels, top with more paper towels and press again.

DON'T SKIP THIS STEP! 

It's VERY important to remove the excess moisture.

STEP 3

Now combine the squash with the remaining ingredients.

STEP 4

Line a baking pan with parchment paper and spray with cooking oil spray.

STEP 5

Drop mixture on pan with a 1/4 cup measuring cup.  Press lightly with fingers until about 1/2 inch thick.

STEP 6

Spray tops with oil and bake at 425 degrees for 10 minutes.

STEP 7

Flip and then bake an additional 8 to 10 minutes, or until golden brown.
