Smoked Mac and Cheese takes a favorite dish and infuses it with smoky flavor.  Starting with uncooked noodles makes it extra easy.

Elbow pasta Cream Cheese Gouda Cheese Cheddar Cheese Butter Half and Half Pepper


Cook in a cast iron skillet on the smoker.  You can cook your mac and cheese alongside other dishes - low and slow or fast and hot. 

Melt the butter in the skillet.  Stir in the remaining ingredients, reserving a little cheese for topping. 

Smoke for about one to one and a half hours, stirring every 20 minutes. When liquid is almost absorbed... 

Top with remaining cheese, breadcrumbs and bbq seasoning, if desired.  Smoke an additional 20-25 minutes.
