After halving your tomatoes, salt them with Kosher salt to taste. Let them sit out for 30 minutes to draw out the excess liquid.
Drain excess tomato juice and mix all ingredients in an airtight container. Store in the fridge for 2-3 hours or up to 24 hours before serving.
