Easy Marinated Tomatoes Recipe

These Easy Marinated Tomatoes are tasty and versatile. They're great on their own, as part of a charcuterie board, or mixed into a salad. With just a few ingredients, you can make ordinary tomatoes into something special that everyone will enjoy.

Ingredients
  

  • 1 pint cherry tomatoes or grape tomatoes, halved
  • 1 clove garlic minced
  • 2 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1-½ teaspoon honey
  • 2 tablespoon basil fresh, torn
  • kosher salt to taste

Instructions
 

  • After halving your tomatoes, salt them with Kosher salt to taste. Let them sit out for 30 minutes to draw out the excess liquid.
  • Drain excess tomato juice and mix all ingredients in an airtight container. Store in the fridge for 2-3 hours or up to 24 hours before serving. 

Notes

You can store the marinated tomatoes in the refrigerator for up to 4 days. After that, they may become too mushy.
Before serving, give the container a gentle shake or stir to redistribute the marinade. It's best to bring the tomatoes to room temperature before eating.
