Peach Vinaigrette

This delicious and easy peach vinaigrette brings the flavor of fresh ripe summer peaches to any green salad.

Ingredients
  

  • 1 large ripe peach peeled
  • ¼ cup extra virgin olive oil
  • 3 Tablespoons white wine vinegar
  • 1 Tablespoon honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt

Instructions
 

  • Put all ingredients in a blender and blend until smooth. Use immediately or store in refrigerator for up to 2-3 days.

Notes

If you don't have a large peach, use 2-3 small ones
Make sure your peaches are very ripe for best flavor
You can use frozen (thawed and well drained) or canned (rinsed and well drained) peaches, but fresh is always best
Don't store for too long as the color can change
