This recipe for Black Bean and Ham Soup makes a hearty soup that’s just perfect for cool weather. Make it as is or leave out the ham for a vegetarian version


Olive oil Onion Garlic Ham  Lime zest & juice Black beans Rotel brand Hot sauce Cumin

Sautee onions, garlic, and diced ham in olive oil.

Add remaining ingredients and bring to a boil, then reduce to a simmer.

Simmer 45 minutes, then partially mash the beans to thicken.  Serve with sour cream, cilantro, diced tomatoes, or jalapenos
