STEP 1

Melt butter and then add onion and cook until soft.

STEP 2

Add flour and blend. Then add stock and cook, stirring until thickened.

STEP 3

Add a small amount of the roux into the cream to "temper"

STEP 4

Add cream and remaining ingredients except sherry,  reserving half of the crab meat.  Simmer.

STEP 5

Combine rest of crab with sherry.  Spoon soup into bowls, topping with some of the crab/sherry mixture.
