This simple and easy recipe for Tomato Gravy is delicious over biscuits for breakfast or brunch.

Canned diced tomatoes Flour Chicken or beef stock (or broth) Salt & pepper Pan drippings (from ham, sausage, or bacon)

INGREDIENTS:

Step

Heat tomatoes (in iron skillet where you've cooked breakfast meat) over medium heat, scraping the bottom of the pan.

Step

Stir flour into stock and whisk until smooth. Whisk mixture into hot tomatoes. Bring to a boil and stir until thickened.

Step

Reduce to a simmer and stir in salt & pepper.  Simmer 10-15 mins.
