Sweet Potatoes
Vegetable Oil
Salt

STEP 1
Cut the sweet potatoes in slices 1/4-1/3 inch thick.
If there's time soak in salt water for 1-2 hours.

STEP 2
Heat oil in a skillet and lay the sweet potato medallions in a single layer.

Cook 6-8 minutes per side until "fork tender".
Remove from pan and sprinkle with salt.
