White Cheddar Poblano Soup

This soup is easy to make and full of flavor.  Chicken can be added to make it extra hearty, but it’s perfection as a vegetarian dish.

Besides poblanos that you've roasted you'll need:  Butter Onion Garlic Stock Salt & Pepper Flour Half and Half White Cheddar

Melt butter in skillet and cook onions and garlic until soft.

Add chicken, cumin, salt & pepper, stock and diced poblanos and simmer 8-10 minutes.

Whisk flour into stock and add slowly to pot, stirring until thickened. 

Add cheese until melted and then serve, topped with tortilla strips and cilantro, if desired.
