Cucumber Apple Salad

This cucumber apple salad taste like pure summer! With a creamy yogurt sauce, fresh mint leaves, and crunchy apples, cucumbers, and celery, this side dish is unique and tasty.

Ingredients
  

  • 1 large apple or 2-3 small ones, diced
  • 4 Persian cucumbers or 1 English cucumber, diced
  • 1 stalk celery thinly sliced
  • ½ cup Plain greek yogurt
  • ½ lemon zested and juiced
  • 1 teaspoon honey
  • 1 Tablespoon extra virgin olive oil
  • salt & pepper to taste
  • ¼ cup fresh mint leaves bruised and torn

Instructions
 

  • Put the diced apples in a small bowl. Add just enough water to cover and add the lemon juice. Stir and set aside to prevent browning.
  • Dice the cucumbers to about the same size as the apple. Thinly slice the celery and add to a medium mixing bowl.
  • In a small mixing bowl, combine the yogurt, honey, olive oil, lemon zest, salt, and pepper. Taste and adjust the seasoning if you like.
  • Drain the apples well and add to the mixing bowl with the cucumbers and celery. Add the mint leaves now, too. Serve with the yogurt dressing on the side, or add it to the bowl and toss to combine.

Notes

This recipe is best made immediately before serving. If you do make it a bit ahead, keep the dressing separate and the apples in the lemon water until you are ready to serve. Drain any water that may have come out of the cucumbers before adding the dressing.
