This cucumber apple salad is the mix of crisp, creamy, and refreshing. The combination of crunchy cucumbers and sweet apples with that tangy yogurt dressing creates such a unique flavor!

What I love most about this salad is how incredibly easy it comes together. You're basically just chopping, mixing, and done! It takes maybe 20 minutes from start to finish.

This would be such a great addition at your next cookout or potluck. While everyone else is bringing the same old potato salad or coleslaw, you'll be the one with something totally different and delicious. The fresh mint really makes it feel special and summery.

I served up my apple cucumber salad with chicken gyros made from our Air Fryer Greek Chicken Skewers and the flavors went together perfectly!

Ingredient Notes

  • Cucumbers - You can use Persian cucumbers or English cucumbers for this recipe since they both have small seeds. English cucumbers are much longer, so you'll probably only need one, while you'll need 3-5 of the little Persian cucumbers.
  • Apples - We went with a sweet apple variety because we thought that went best with the tangy yogurt dressing. I recommend Fuji apples, Honeycrisp, Gala, or Red Delicious. If you prefer a tart apple, Granny Smith would work fine, too.
  • Celery - Be sure to thinly slice the celery since it has a strong flavor.
  • Plain Greek Yogurt - You can use full fat or low fat based on your preference.
  • Olive Oil - This keeps the dressing smooth and creamy.
  • Lemon - We'll use the juice for preventing the apples from turning brown and the zest will add a bright flavor to the yogurt dressing
  • Honey - This takes a bit of the tartness out of the yogurt.
  • Mint - Fresh mint leaves perfectly complement the other ingredients.

How to Make Cucumber Apple Salad

  1. Prep the apples first - Dice your apples and immediately put them in lemon water to prevent browning while you prep everything else.
  2. Chop the vegetables - Dice the cucumbers to match your apple size and thinly slice the celery so it doesn't overpower the other flavors.
  3. Make the dressing - Whisk together the yogurt, honey, olive oil, lemon zest, salt, and pepper until smooth and creamy.
  4. Combine everything - Drain the apples well, then toss with the cucumbers, celery, and fresh mint. Add the dressing right before serving.

Expert Tips

  • This recipe is best made immediately before serving. If you do make it a bit ahead, keep the dressing separate and the apples in the lemon water until you are ready to serve.
  • Drain any water that may have come out of the cucumbers before adding the dressing, and add the mint right at the end.
  • Don't skip the lemon water (just water with a few spoonsful of lemon juice) for the apples - it really prevents that brown, gross look.
  • Bruise the mint leaves gently before tearing to release more flavor.

Storage

This recipe is best made immediately before serving, but you could make it up to 1 day in advance. Stir well before serving.

Recipe FAQs

What if I don't have fresh mint?

You are welcome to leave it out! I love the fresh flavor mint adds, but not everyone does. Thyme and tarragon would also go great with the flavors in this dish!

Can I make this recipe in advance?

I really don't recommend it. The cucumbers will get watery, the apples may turn brown, and the dressing will separate. This is a dish best served fresh!

Ingredients
  

  • 1 large apple or 2-3 small ones, diced
  • 4 Persian cucumbers or 1 English cucumber, diced
  • 1 stalk celery thinly sliced
  • ½ cup Plain greek yogurt
  • ½ lemon zested and juiced
  • 1 teaspoon honey
  • 1 Tablespoon extra virgin olive oil
  • salt & pepper to taste
  • ¼ cup fresh mint leaves bruised and torn

Instructions
 

  • Put the diced apples in a small bowl. Add just enough water to cover and add the lemon juice. Stir and set aside to prevent browning.
  • Dice the cucumbers to about the same size as the apple. Thinly slice the celery and add to a medium mixing bowl.
  • In a small mixing bowl, combine the yogurt, honey, olive oil, lemon zest, salt, and pepper. Taste and adjust the seasoning if you like.
  • Drain the apples well and add to the mixing bowl with the cucumbers and celery. Add the mint leaves now, too. Serve with the yogurt dressing on the side, or add it to the bowl and toss to combine.
