This easy Mediterranean Cucumber Salad comes together quickly and has all the fresh flavors of your summer garden.

I was developing this recipe the same weekend I was planting my garden so I had fresh tomatoes, cucumbers, and herbs on the brain. I knew I wanted to come up with a side dish that could be my go-to once the garden started producing.
Cucumbers are so versatile- I love them with Asian flavor combinations as well, but Mediterranean is my usual go-to. Rich olive oil and tart lemon with all the oregano, basil and mint you can find- You just can't go wrong!
We used these same flavors in some of our other Mediterranean recipes like Yogurt Sauce for Chicken, Greek Shrimp Crostini, Greek Chicken Bowls and Greek Flatbread!

Substitutions
The recipe calls for seedless English cucumbers and Campari tomatoes, but of course you can use any type of cucumbers and tomatoes you have on hand. I do love the seedless cucumbers, though, because they don't get as watery as the traditional kind as the day goes on.
I also used dried oregano and basil and fresh mint, but you can use fresh or dried versions of any of the herbs. Just remember that dried herbs are a bit stronger than fresh, so adjust accordingly.
I didn't add feta cheese or kalamata olives to my Mediterranean Cucumber Salad, but both would be divine with this combination, so throw them in if you'd like!
If you need some protein to make this a full meal, try this marinated chicken. You could also try it as a side for this Gourmet Grilled Cheese.

How to Make Mediterranean Cucumber Salad
First, mix up the dressing so the flavors can meld. In a small bowl, combine the lemon zest and juice with olive oil, minced garlic, oregano, basil, and salt.
Then, slice your cucumbers and tomatoes and tear up your fresh mint. Pour the dressing over it all and toss to coat. It's that simple!

Can you make this recipe ahead of time?
I wouldn't recommend making this ahead because the juices in both cucumbers and tomatoes will drain out of them when they're sliced making the vegtables soft and diluting the flavors of the dressing.
To make it come together quickly, try just making the dressing ahead of time and then you only need to slice up the veggies and toss!

Mediterranean Cucumber Salad
Ingredients
For the dressing:
For the salad:
- 6 mini seedless cucumbers
- 5 small tomatoes like Roma or Campari
- 3 tablespoon fresh mint torn
Instructions
- Toss dressing ingredients in a small bowl and set aside.
- Sliced cucumbers, tomatoes, and tear the mint into a medium sized bowl. Toss with the dressing and serve immediately.
