A traditional Rotisserie Chicken Salad gets a punch of buffalo flavor. It can be made spicy or not, just like Buffalo Chicken Wings.
Starting with Rotisserie Chicken from the deli section of your market means that this chicken salad comes together in just minutes and it's low carb to boot. If low carb eating is your jam be sure to check out Keto Parmesan Crusted Chicken. One of our favorite Cajun/Creole chicken recipes is Grilled Blackened Chicken. It's the bomb!
Aren't Rotisserie Chickens just great? Sometimes we get one and cut all of the meat off. Then you can toss it in Roasted Poblano Pepper Soup, Chicken Vegetable Soup or make chicken salad. Rotisserie chicken is the quickest way to make Chicken Salad with Apples and Pecans, too!

What else goes in Buffalo Style Chicken Salad?
We added the same vegetables that you would typically eat with Buffalo Wings. Coarsley chopped carrots and celery give a flavorful crunch and complete that whole "Buffalo" feel.
We chopped ours in a mini food processor, but you can certainly do it by hand. The photo below shows about how big the pieces are.
What to add for creaminess:
The recipe calls for a combination of mayonnaise and plain Greek yogurt. But we always try to encourage flexibility when possible. If you have mayo, but no Greek yogurt don't run to the store just for that.
By the same token, if you have yogurt but no mayo this Rotisserie Chicken Salad is still going to be delish.
What hot sauce is best in Buffalo Style Rotisserie Chicken Salad?
We love Frank's Original and find that it gives the most authentic "Buffalo" flavor. It's also not super hot, so it makes adjusting the kick easy enough.
If you have another hot sauce that you love, feel free to use that. Just keep in mind the heat level you and yours like.
If you've been around here long you know that we love spicy foods. One of our most popular recipes is our Spicy Pimento Cheese. Of course, it can be toned down, but we think it's beloved because of that spicy kick!
How to serve Buffalo Chicken Salad
Of course you can certainly make it into a sandwich and that would be awesome! We like to put a scoop on a pretty lettuce leaf and that keeps it low carb. But, you don't have to get that fancy. You'll love a big spoonful on plate with some crackers.
For a fun party food fill little phyllo shells that you find in the freezer section of your store. No matter how you serve it, if you love buffalo wings and you love chicken salad this is the dish for you.

Can I use all mayo?

I think that would be fine Courtney.

I made this as described, except that I used 2 or 3 tablespoons of chunky blue cheese dressing in place of dry ranch dressing mix (didn't have any of that on hand). It was delicious, and it couldn't be easier! My husband had his, with a bit of lettuce, on a roll, and I had mine on a bed of lettuce. Thanks for the recipe!

p.s. I calculated the calories (with my blue cheese dressing substitution), and, assuming this is 4 servings, it's about 471 cal/svg.
