Ingredients
  

  • 1 pound shrimp
  • 1 bag shrimp boil
  • ½ teaspoon red pepper flakes
  • 2 cucumbers diced
  • ½ cup mint leaves coarsely chopped
  • 1 lemon juiced
  • 3 Tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon sriracha
  • 1 clove garlic minced
  • salt and pepper to taste

Instructions
 

  • Bring a pot of water to a boil with shrimp boil bag and red pepper flakes. 
  • Boil shrimp for 3 minutes.
  • Drain shrimp and let cold water run over them for 1-2 minutes. Drain again. Peel.
  • Combine cucumbers and shrimp in bowl.
  • Mix remaining ingredients and pour over shrimp and cucumbers.
  • Cover and chill at least one hour.

Notes

Diced tomatoes can be added if desired.
