These blackened shrimp bowls are full of fresh flavors and totally customizable! Load them up with a homemade pineapple salsa, black beans, and avocado for a healthy meal that is bursting with flavor.

Ingredients
  

Pineapple Salsa

  • 2 cups pineapple chopped
  • ¼ red onion minced
  • 1 jalapeno minced
  • 1 lime juiced
  • ¼ cup cilantro chopped
  • 1 teaspoon salt

Instructions
 

  • Combine pineapple salsa ingredients in a small mixing bowl and set aside.
  • Season shrimp on both sides with blackened seasoning. Heat a skillet to medium high heat and add olive oil. Cook 1-2 minutes on each side, being careful not to overcook.
  • Divide the rice between 4 bowls. Top with pineapple salsa, black beans, shrimp, and sliced avocado.

Notes

You can trade the white rice for brown rice, coconut rice, or cauliflower rice if you prefer. 
Try mango salsa instead of pineapple salsa for a different twist!
