These blackened shrimp bowls are piled high with Caribbean-inspired toppings like black beans, a fresh pineapple salsa, and avocado slices. They can also be customized in a variety of ways!

Ingredients Needed

- Shrimp - Look for large shrimp and get them peeled and deveined to make life easier on yourself!
- Blackened seasoning - We have a super easy blackened seasoning recipe, but store-bought is fine too!
- Olive oil - This is for cooking the shrimp!
- Cooked white rice - You could also use brown rice or even cauliflower rice if you're watching the carbs!
- Black beans - I like to jazz mine up by cooking them with garlic, a chipotle chili pepper, and a splash of beef broth, but you can also just use them rinsed straight out of the can!
- Pineapple salsa - I made a fresh pineapple salsa with chopped pineapple, red onion, a jalapeno lime juice, cilantro, and salt. You can also buy your pineapple salsa online!
- Avocado - A bit of sliced avocado adds a creaminess that goes perfectly with the other flavors and textures in these blackened shrimp bowls.

How to Make Blackened Shrimp Bowls
- Prepare pineapple salsa - Combine chopped pineapple, fresh cilantro, minced red onions, jalapeno, lime juice, and salt in a small bowl. Toss to combine and set aside.
- Season shrimp - Lay the shrimp out on a plate in a single layer. Sprinkle with blackened seasoning on both sides as set aside.
- Prepare other ingredients - Shrimp cooks fast, so you want to have allt he other components for your bowls ready to go. Slice your avocados, rinse and drain your black beans, and cook the rice according to package directions.
- Cook shrimp - Heat a large skillet to medium high heat with olive oil. When hot, place the shrimp in a single layer, being careful not to crowd them. For large shrimp you'll need about 2 minutes on 1 side, and 1 minute on the other side.
- Assemble blackened shrimp bowls - Divide the rice between 4 bowls. Top with black beans, pineapple salsa, shrimp, and sliced avocado.

Substitutions and Variations
The awesome thing about blackened shrimp is that it can go with so many different cuisines. I went with sort of a tropical flair, but here are some ways you can jazz it up:
- Blackened Shrimp Burrito Bowls - To give it a more southwestern twist, add some cooked green bell peppers and onions, switch out the pineapple salsa for salsa verde, and add toppings like sour cream, shredded cheese and pickled jalapenos.
- Change up the salsa - If you don't have time to make a fresh salsa, you can buy store-bought pineapple salsa! You could also switch it out for mango salsa, or your favorite red or green salsa if you prefer.
- Make it jerk - The ingredients I used would go great with jerk seasoning, so feel free to use jerk shrimp instead of blackened shrimp if you want it to have even more of a Caribbean flair!
- Change up the rice - These ingredients would go awesome with coconut rice if you're feeling fancy. A cilantro lime rice would be great as well!
Sara's Expert Tips
- Don't overcook your shrimp - I used fresh Georgia shrimp, which are pretty big. If you use imported shrimp, yours will probably be a bit smaller, so be careful not to overcook them.
- Jazz up your black beans - I cook a lot of black beans around here and love to doctor up the canned beans before I serve them. Check the FAQs below for my ideas!

Blackened Shrimp Bowls
Ingredients
- 1 ⅓ pound shrimp large
- 2 cups white rice cooked
- 1 Tablespoon blackened seasoning
- 1 can black beans rinsed and drained
- 2 avocados sliced
- 1 Tablesoon olive oil
Pineapple Salsa
- 2 cups pineapple chopped
- ¼ red onion minced
- 1 jalapeno minced
- 1 lime juiced
- ¼ cup cilantro chopped
- 1 teaspoon salt
Instructions
- Combine pineapple salsa ingredients in a small mixing bowl and set aside.
- Season shrimp on both sides with blackened seasoning. Heat a skillet to medium high heat and add olive oil. Cook 1-2 minutes on each side, being careful not to overcook.
- Divide the rice between 4 bowls. Top with pineapple salsa, black beans, shrimp, and sliced avocado.
