Our best tips for working with summer squash:
- After cutting or slicing, sprinkle with salt and let them sit a few minutes and then pat with paper towels. This removes excess moisture and prevents sogginess. This is the same method we use in our almost world famous Crustless Tomato Pie.
- If cooking both zucchini and yellow squash for the same recipe start the zucchini a minute or two before the yellow squash because it cooks just slightly more slowly.
- Choose small to medium size squash for your recipes. Too large and the center is quite "seedy".
