Greek salad dressing with yogurt includes all the Mediterranean flavors you love in a creamy yogurt based dressing.

- ⅔ cup plain Greek yogurt
- 2 Tablespoons fresh Lemon Juice
- 1 teaspoon lemon zest
- 4 Tablespoons Extra Virgin Olive Oil
- 1 clove garlic minced
- ¾ teaspoon dried oregano
- 4 Tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- ½ teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
Mix all ingredients in a small to medium bowl with a whisk.
Refrigerate, tightly covered for 2-3 hours before serving.
Stir, and then let sit at room temperature for approximately 30 minutes before serving.
- If serving larger entree' salads this recipe will only make 4 servings.
- Approximately ½ of a medium lemon will yield the correct amount of juice and zest.
- Fresh herbs may be substituted, but 3 times as much will be needed.
- Dressing may be stored in refrigerator, tightly covered for up to 5 days.
