Greek salad dressing with yogurt includes all the Mediterranean flavors you love in a creamy yogurt based dressing.

Ingredients
  

  • cup plain Greek yogurt
  • 2 Tablespoons fresh Lemon Juice
  • 1 teaspoon lemon zest
  • 4 Tablespoons Extra Virgin Olive Oil
  • 1 clove garlic minced
  • ¾ teaspoon dried oregano
  • 4 Tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste

Instructions
 

  • Mix all ingredients in a small to medium bowl with a whisk.
  • Refrigerate, tightly covered for 2-3 hours before serving.
  • Stir, and then let sit at room temperature for approximately 30 minutes before serving.

Notes

  • If serving larger entree' salads this recipe will only make 4 servings.
  • Approximately ½ of a medium lemon will yield the correct amount of juice and zest. 
  • Fresh herbs may be substituted, but 3 times as much will be needed.
  • Dressing may be stored in refrigerator, tightly covered for up to 5 days.
