Old Fashioned Creamed Corn

Here's how to make old fashioned creamed corn the Southern way. This is creamed corn in its purest form, with only butter and salt added.

Ingredients
  

  • 10 ears corn
  • 1 teaspoon salt
  • 1 Tablespoon butter or bacon grease

Instructions
 

  • Cream corn with corn creamer or knife (see notes below)
  • Heat in saucepan over medium heat
  • Reduce heat to medium-low
  • Add salt
  • Cook, stirring constantly, being sure to scrape bottom for 10-15 minutes
  • Corn is done when thickened and translucent
  • Add butter and stir until melted

Notes

  • Bacon grease is the traditional seasoning for creamed corn, but butter can be used instead. 
  • If a corn creamer is not available you can use a large, sharp knife. Cut across the very tips of the corn kernels and then scrape with the dull side of the knife.
