Simple Strawberry Salad Dressing

Fresh, creamy and tangy, this simple strawberry salad dressing comes together in minutes with just a few ingredients. It's perfect for brightening up any salad.

¾ cup strawberries halved or quartered 2 Tablespoons white wine vinegar 2 Tablespoons Greek Yogurt ¾ teaspoon black pepper freshly and finely ground ½ teaspoon lemon zest 1 teaspoon honey ¼ cup safflower oil or other neutral oil ¼ teaspoon salt
Wash and clean strawberries, remove tops and cut into pieces. Zest lemon.
Put all ingredients in blender and blend until smooth.
Refrigerate, covered until time to serve. Make 2-3 hours ahead if possible.
Any neutral oil may be used such as canola, safflower or grapeseed.
Honey may be adjusted as needed for tartness or sweetness of strawberries.
Any fat content of Greek yogurt may be used.
This recipe makes enough for 8 side salads or 4 entree' salads.
