Here's why you'll love it

First of all, it's salmon. If you're reading this you must love it, but we know you can get tired of the same old ways of preparing it. This recipe will make you sing!

It's healthy. Lean fish, vegetables, a little olive oil and herbs and feta cheese. You'll feel good about yourself when this is your main dish.

It's easy to make. In just a few minutes you'll have the topping stirred up with those flavors blending. Then pop the salmon in the oven to bake until it's almost done. The topping goes on just long enough to heat thoroughly, and boom! An amazing dinner is served.

The ingredients you'll need and substitution options

  • Salmon fillets - This recipe is written for two, but you can easily double or even triple it.
  • Extra virgin olive oil - just a little for brushing the salmon fillets.
  • Smoked paprika - We love and use it a lot. If you don't have any you can use regular paprika, but we highly recommend you add the smoked kind to your spice cabinet.
  • Salt and Pepper
  • Diced Tomatoes (we use canned tomatoes, but if you have fresh ones on hand feel free to use those).
  • Oregano - use fresh if you have it, otherwise use dried.
  • Dill - if you have fresh dill it's fabulous here.
  • Additional herbs as you like.
  • Garlic - freshly minced
  • Feta cheese - buy it crumbled or crumble your own.
  • Kalamata olives - it's easiest to buy the pitted ones.
  • Capers - optional, but a very tasty addition.

How to make it

  1. Pat the fish fillets dry with a paper towel and then brush lightly with olive oil.
  2. Season the salmon by sprinkling with salt, pepper and smoked paprika.
  3. The ingredients for the topping can be blended ahead of time for flavor enhancing, but I leave out the feta cheese until right before you put it on the fillets.
  4. Bake the salmon until nearly done. This is going to vary with how thick your fillets are, and how well done you like your salmon.
  5. Spoon the topping over the salmon. You just want time for the topping to get good and hot. About another 8-10 minutes in the oven should do it.

Your recipe will be great with these tips

  • Patting the salmon dry and then brushing with olive oil helps the seasoning to adhere to the fish.
  • You can definitely stir the topping ingredients together ahead of time (leaving out the feta as mentioned above) If it's more than an hour until you'll cook the salmon, cover and refrigerate the topping. If you do this keep in mind that you're putting cold ingredients over your fish and it will take a little longer to reach your desired level of doneness.
  • Everyone has their own idea of well done they like their salmon. This is a great guide with all of the details on salmon temperatures.
  • This dish is best served hot and fresh from the oven.

Which herbs to use?

Herbs commonly used in mediterranean or Greek cooking are basil, oregano, parsley, rosemary, dill, sage, bay and coriander.

Any combination of these would be amazing in this salmon dish. At the time we made it for the photos we had fresh basil, dill, Italian parsley and oregano so we used those. We use similar seasonings for our Yogurt Sauce and Greek Salad Dressing recipe.

If you don't have any fresh herbs you can use dried, but just remember that dried herbs are much stronger in flavor, so you will use less of them - only about 25-30% of what you would need with fresh.

Ingredients
  

  • 10 ounces salmon 2 filets
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt divided
  • 1 teaspoon black pepper divided
  • 1 cup diced tomatoes canned or fresh
  • 2 teaspoons fresh oregano ½ teaspoon if using dried
  • 2 teaspoons fresh dill ½ teaspoon if using dried
  • 1 clove garlic minced
  • 2 ounces feta cheese crumbled
  • ½ cup kalamata olives pitted
  • 1 Tablespoon capers

Instructions
 

  • Stir together tomatoes, ½ teaspoon salt, ½ teaspoon black pepper, oregano, dill, garlic, olives and capers. Set aside.
  • Pat salmon dry with a paper towel. Brush with olive oil and sprinkle with remaining salt, pepper and paprika.
  • Place salmon in baking dish that has been sprayed or rubbed with olive oil. Bake at 400℉ for about 10 minutes, or until slightly less than desired doneness.
  • Stir feta cheese into tomato mixture and spoon over top of salmon. Return to oven and bake until desired doneness - about 7-12 additional minutes, depending on thickness of fillets.
  • Serve immediately.

Notes

  • This recipe is written for two servings, but can easily be doubled or tripled. 
  • Several different herbs may be substitued or added, including basil, parsley, rosemary.
  • Cook times for salmon will vary according to the thickness of the fillets and the desired level of doneness.

    I've been wanting to eat more salmon for the health benefits but haven't been too crazy about the recipes I've come across so far. This one is amazing! I love Kalamata olives and feta, and all the other seasonings are delicious as well. This recipe is definitely a keeper!
