This baked chicken with feta already has incredible flavor, and can be easily customized by adding more veggies! You'll have a healthy meal on your table in under an hour, and it only requires one pan!

Baked chicken with feta, lemon, and olives

ANyone who know me knows that one thing is true — I LOVE cheese. Goat cheese, cheddar, smoked gouda... bring it on! That's why I'm in love with this baked chicken topped with feta cheese.

One thing I really love about this dish is how customizable it is. Add in zucchini, cherry tomatoes, bell peppers, or parboiled potatoes, and you've got yourself a healthy meal that tastes just like you want it to.

I also love that it doesn't make a big mess in the kitchen! By using one bowl for tossing your veggies and then using the same one to make the feta cheese, the only thing left is a baking dish or baking sheet to cook it on. Easy clean up is another favorite of mine!

Ingredients Needed

Ingredients needed for baked chicken with feta
  • Boneless skinless chicken breast — This should amount to about 1 ¾ pounds. You could also use chicken thighs if you prefer.
  • Shallots — You could use red onions instead if that's what you have on hand, but I love shallots for their slightly milder and sweeter flavor.
  • Olive oil — You'll use a bit of olive oil for coating the veggies, and the rest will be mixed with the feta to make a smooth and creamy topping for the chicken
  • Seasoning — Garlic powder, oregano, thyme, salt, and pepper are all you need to make this easy chicken recipe!
  • Feta cheese — Remember that feta is salty, so you don't want to use too much salt elsewhere in the recipe. I love the tang it adds to the chicken!
  • Lemon — We'll be juicing one lemon to mix with the feta cheese, but the other lemon will be cut into wedges and tossed with the veggies. This creates a super flavorful sauce at the end!

How to make Baked Chicken with Feta

  1. Prepare: Preheat the oven to 425 and spray a baking dish or baking sheet with nonstick spray. Pound your chicken down to an even thickness. Place the chicken on the prepared dish or sheet pan.
  2. Season the veggies: Place the shallots, olives, half the lemon, and garlic in a medium mixing bowl. If you are adding tomatoes, parboiled potatoes, zucchini, or any other veggies, do it now. Toss with olive oil, salt, pepper and then arrange around the chicken.
  3. Make the feta topping: In the same bowl, combine feta, remaining olive oil, lemon juice, oregano, thyme, salt, and pepper.
  4. Top the chicken: Spread the feta mixture on top of each piece of chicken.
  5. Bake: Bake for 25-35 minutes, or until chicken is cooked through.

  • Before serving, squeeze the lemon that cooked in the juices and herbs for a little burst of freshness.

  • A meat thermometer is your best friend here! Be sure to cook the chicken until it reaches 165 degree.

Variations and Serving Suggestions

This dish would be awesome with zucchini, squash, tomatoes, mushrooms, bell peppers, or even potatoes! Just be sure to par-boil the potatoes first since they'll take longer to cook than the chicken.

This baked chicken with feta and olives would be the perfect complete meal if you add potatoes to the baking dish! For something lighter, try serving it with a green salad topped with Balsamic Basil Vinaigrette or Greek Salad Dressing with Yogurt, or our Mediterranean Cucumber Salad.

Storage Information

The chicken will keep in an airtight container in the refrigerator for up to 4 days.

It reheats really well too in the microwave or oven, so it's a perfect choice for meal prep!

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 shallot thinly sliced
  • ½ cup green olives
  • ¼ cup olive oil plus 2 Tablespoons
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • black pepper to taste
  • ¾ cup feta cheese crumbled
  • 2 lemons 1 juiced, 1 cut into wedges
  • 2 teaspoons garlic minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme

Instructions
 

  • Preheat the oven to 425 degrees F. Spray a baking dish or baking sheet with nonstick cooking spray.
  • Pound the chicken out to an even thickness and pat dry. Place the chicken on the prepared sheet pan.
  • In a medium bowl, toss the shallots, olives, and lemon wedges (plus any other veggies you want to use) with 2 Tablespoons of olive oil, garlic powder, ½ teaspoon of salt, and pepper. Spread the veggies and lemon around the chicken.
  • In the same bowl, combine feta cheese, remaining olive oil, lemon juice, minced garlic, oregano, thyme, remaining salt, and pepper. Spread the mixture onto the chicken breasts.
  • Roast for 25-35 minutes, checking for doneness with a meat thermometer. Spoon the olives, shallots, and their sauce over the chicken and serve!

Notes

Store in an airtight container in the refrigerator for up to 4 days. 
I highly recommend adding other veggies you love like cherry tomatoes, zucchini, mushrooms, and bell peppers!
