I love these no bake mini cheesecakes! They have only a few ingredients and it’s just crazy how quickly they come together. On top of that, they are so adorable your friends and family won’t believe you didn’t get them from a bakery.
The ingredients are pure and simple, too — another vote in their favor. No processed whipped topping in these little babies.
Satisfy That Sweet Tooth with Just a Few Bites
I’m a huge fan of small desserts. Like most people, I get a hankering for something sweet, but I find if you keep it down to just a few bites you can be satisfied without consuming a ton of calories. Mini Cheesecakes Made Pretty
You could get extra fancy and pipe the filling into the shells with a star tip, but did you know that, in a pinch you can put filling for these mini cheesecakes (or anything else — deviled eggs for example) into a zip-loc bag and cut off the corner?

I actually do use disposable decorator bags, because they are a little sturdier, but believe me, I have run out and fallen back on the baggie trick plenty of times. The decorator bags are super handy to have around though — here’s a whole page full of them to check out.
The Perfect Make Ahead Dessert
These are great little make ahead desserts, so they’re perfect when you’re planning a party. I wouldn’t make them more than about a day ahead, though. Otherwise, the little shells could start to lose their crispiness. If you’re really trying to plan ahead though, you could make the filling up to 2 or 3 days ahead and just fill the shells closer to serving time. Using the same pastry shells are these Mini Lemon Tarts. I like to make both varieties to give guests a selection.
UPDATE! We had a few leftover and I put them in the freezer. A week or so later we got them out and tried one frozen. They made an awesome frozen treat as well!

Mini Chocolate Chip Cheesecakes
Ingredients
- 1/2 cup sugar
- 1 Tbsp. vanilla
- 8 oz. cream cheese softened
- 3/4 cup heavy whipping cream
- 1/2 cup mini chocolate chips semi-sweet
- 45 mini fillo shells
Instructions
- Beat sugar, vanilla and cream cheese at medium speed until well mixed.
- Beat whipping cream in a separate bowl at high speed until peaks form.
- Gently fold whipped cream into cream cheese mixture.
- Gently stir in chocolate chips.
- Pipe mixture into individual fillo shells.
- Garnish with fresh mint leaves and/or additional chocolate chips.
