    Oven Roasted Cajun Potatoes

    Cajun spiced potatoes are roasted in the oven along with the holy trinity of vegetables (peppers, onions and celery). This easy to make side dish is bursting with amazing flavor!

    Simple and versatile

    Make the entire dish in one oven ready skillet (like cast iron) or your favorite baking pan. There are no extra bowls or pans to wash later.

    You can use any type potatoes you have on hand whether they’re red potatoes, baby potatoes or baking russet style to make this incredibly easy side dish.

    Simply wash thoroughly and leave them unpeeled. Then cut into similar sized pieces, add bell peppers, onions and celery (also known as the holy trinity in the world of Cajun cooking).

    Then you’ll toss them in olive oil with seasoning and slide into the oven. How easy is that?

    What to serve them with:

    You might think these potatoes would only go with Cajun or Creole dishes, but you’d really limit yourself that way. It’s actually an all-around side dish that would go great with a variety of other foods.

    We’re listing a few of our favorites, but feel free to make them often and serve with whatever you like.

    Now, we’re not trying to say they wouldn’t be completely perfect with a number of Cajun dishes too. Y’all know we’re big fans, so we’re highlighting a few of those to serve your potatoes with.

    • Cajun Baked Chicken
    • Fiery Cajun Shrimp
    • Fried Oyster Po’Boys
    • Crab Cakes with Cajun Cream Sauce
    • Bourbon Glazed Cajun Beef Tenderloin
    • Cajun Cream Sauce over Fish or other proteins

    And, if you need a second Creole side dish be sure to consider Red Beans and Rice. This one is Popeyes style and makes a perfect option that everyone loves.

    How to be sure your Cajun potatoes turn out great

    1. Cut your potatoes into pieces as closely as possible to the same size.
    2. Cut the veggies into similar sizes too.
    3. Toss with the olive oil first before you add seasoning. This will ensure that the seasoning “sticks” to every surface of the potatoes and vegetables.
    4. Cooking in an iron skillet is recommended for best crispiness, but you can use any baking dish.
    5. Stir every 15 minutes, checking for doneness after the second stirring. Ours were cut into pieces about ¾ of an inch and took 45 minutes, but you can adjust the time according to the size of your potatoes.

    That’s it really. Use one pan, simple ingredients and a little time in the oven to get an outstanding side dish.

    Ingredients
      

    • 1½ pounds potatoes washed, unpeeled and cut into pieces about ¾ inch in size
    • 1 bell pepper medium sized, cut into ½ inch pieces
    • 1 onion small-medium sized, cut into ½ inch pieces
    • 2 celery stalks cut into ½ inch pieces
    • 1 Tablespoon Extra Virgin Olive Oil
    • 2 teaspoons Cajun or Creole Seasoning we recommend Tony Chachers Original Creole Seasoning
    • ½ teaspoon smoked paprika
    • salt as needed to taste

    Instructions
     

    • Put potatoes and vegetables in a cast iron skillet (10") or similar sized baking dish.
    • Pour olive oil over all and stir to coat.
    • Add seasoning and paprika, plus salt if needed, and stir to coat.
    • Roast in a 400° oven for 30-45 minutes, stirring every 15 minutes and checking for doneness after a total of 30 minutes.

    • Add salt according to taste and the saltiness of your Cajun/Creole seasoning
