Cool, crisp, and easy, Cream Cheese Cucumber Bites are the perfect 3-ingredient appetizer. Made with fresh cucumbers, cream cheese, and everything bagel seasoning, they’re ready in minutes and full of flavor!

These easy cucumber appetizers are on my go-to short list for so many occasions. While they make a great addition to a party menu they're also fun appetizers to have at home when you want a charcuterie board type meal just for the family.
I like to pair them with chilled peach soup for baby showers or wedding showers in the summer. At Christmas, you can top with cherry tomatoes or grape tomatoes that have been halved for a bright color combination and serve them with a heartier appetizer like 3 Ingredient Sausage Balls or Steak Crostini.
I especially love that this easy appetizer is low carb. It isn't low fat by any means, but they are a fantastic addition to other carby appetizers like crostinis and dips with crackers.
No matter the occasion or time of year you serve these lttle bites, you'll impress everyone and nobody has to know how easy they were!

Ingredient notes
Seriously y'all - there are just 3 ingredients needed.
- Fresh Cucumbers - They can be any variety as long as they're not too tiny. English cucumbers, Persian cucumbers or those you grow at home in your garden will work just fine.
- Cream Cheese - We always recommend a top quality brand like Philadelphia so you can be confident of having the best.
- Everything Bagel Seasoning - Full of all your favorite flavors, I find it easy to find in the spice aisle of most grocery stores. If you want to order online, I've linked below to the brand I use below.

Instructions
- Wash and slice the cucumbers into approximately ¼ inch thick rounds. I don't peel the cucumbers at all as long as they have thin skin. If yours have thicker skin use a vegetable peeler and take off ribbons of the skin, leaving a few "stripes".
- Let the cucumber rounds sit on a platter at room temperature for 10-15 minutes to release some moisture. You'll want to pat them dry with a paper towel.
- Mix the softened cream cheese with the seasoning in a small bowl with a spoon or a hand mixer and then put in a piping bag with a star tip if you have one.
- Pipe a small amount of the cream cheese filling on top of each of the slices and then sprinkle with additional everything bagel seasoning before arranging on a serving plate or platter.
Pam's tips
- Be sure your cream cheese has come completely to room temperature before piping. This ensures that it's the perfect consistency.
- If you don't have a piping bag and star tip you can use any type of baggie and just cut off one corner. We do this with our deviled egg recipes too!
- To make your cucumber cream cheese bites extra pretty top them with fresh herbs. A sprig of thyme is pretty (we love a little on these cheese tartlets too) but a sprinkle of fresh dill, parsley or chives is great as well.

Variations
- If you prefer the cream cheese plain you can leave the Everything Bagel Seasoning out of the cheese mixture and just sprinkle it on top. We like the extra punch of flavor it brings though.
- For a little spicy kick add a sprinkle of red pepper flakes.
- As mentioned above, and especially appropriate at Christmas is a topping of a half cherry tomato.
- Our very favorite variation is pictured below and the flavor combination is amazing! A half green olive (for color we like the ones stuffed with pimento peppers) is absolutely a perfect veggie appetizer.

FAQ's
No. Keep it very simple and use only the cream cheese with whatever seasoning you like. Softened cream cheese is the perfect consistency for piping.
Any type that is not too small will work fine. If your cucumbers have seeds you can scoop a little out of the center with a small spoon or melon baller.
They are the perfect addition to the tower of goodies for your tea service.
How to store
We like to make our cucumber bites 1-2 hours ahead of time and let them sit uncovered in the refrigerator until time to serve.
If it's going to be longer you can keep them in an airtight container up to 24 hours. You'll need to make sure it's tall enough to not crush your pretty cucumber bites.
For the best presentation I would make the cream cheese mixture, slice the cucumbers and then assemble 1-2 hours prior to serving.
We do not recommend freezing this recipe.
How to serve/what to serve them with

I love to serve appetizers on a cake stand. The height just adds interest to your buffet or table. They're beautiful however served on any plate or platter.

Cream Cheese Cucumber Bites
Ingredients
- 8 ounces cream cheese room temperature
- 2 teaspoons Everything Bagel Seasoning plus more for sprinkling
- 2 cucumbers large (enough for 36 slices)
Instructions
- Bring cream cheese to room temperature and then stir in 2 teaspoons seasoning.
- Slice cucumbers into ¼ inch thick slices. Let sit at room temperature 10-15 minutes and then pat dry with paper towels.
- Pipe small amount of cream cheese mixture onto top of each cucumber slice.
- Sprinkle top with more seasoning and garnish if desired.
Notes
- Cucumbers may be partially peeled if desired.
- Patting with paper towels ensures that slices are dry and cream cheese mixture will adhere.
- If seeds are present cucumber slices may be scooped slightly with a small spoon or melon baller.
- Garnish can be fresh herbs, small tomato halves or olive haves.
