Backstory on the smoked deviled eggs recipe
In doing research for our sister site, Discovering Coastal Georgia, we visited a St. Simons Island resort restaurant to try some of their new menu items. I know it's a tough job, but somebody's got to do it, right?
We tried several dishes, but our favorite was the smoked deviled eggs. Their version is pictured below.

Right then and there we determined that we were going to develop our own recipe to share with you guys. It did take a little bit of trial and error to get the eggs cooked, but not overcooked, and full of smoky flavor. But, after a few attempts and lots of notes we've got it perfect and now it's time to share.
Ingredient notes
- Eggs - Large is the standard and what we always buy. We like to use very fresh eggs for our deviled egg recipes.
- Mayonnaise - We have two southern brands that we love and those are Dukes and Blue Plate.
- Pickle Relish - Use sweet pickle relish for this recipe.
- Salt and Pepper
- Smoked Paprika - We use it in our Blackened Seasoning which means we use it in all of the recipes containing that seasoning blend. It gives these eggs another level of smokiness.

How to make smoked deviled eggs
- Start by cooking hard-boiled eggs. We have a great method for getting a perfect egg every single time. Visit the Bacon Jalapeno Deviled Egg Recipe or the Garlic Herb recipe posts for the step by step instructions. The end result is that they are cooked perfectly and so easy to peel! IMPORTANT NOTE: For this recipe you will only cook your eggs for 12 minutes. Otherwise, they will overcook in the smoker.
- Once the eggs are cooked, peel and refrigerate until time to smoke.
- Allow about 45 minutes to smoke the eggs at 200 degrees. Make sure that they are in a single layer and not touching so the smoke penetrates the egg whites all around.
- Remove from the smoker and cover in a tightly sealed container for 8-24 hours. This allows the smoke flavor to develop further.
- Now you'll slice the eggs in half and scoop the egg yolks into a mixing bowl and mash with a fork until smooth.
- Add the remaining ingredients (except the paprika) and blend thoroughly. Some people like a dab of yellow mustard, dijon mustard, or hot sauce added at this point.
- Put the egg yolk mixture into a baggie or piping bag and pipe into the white halves.
- A sprinkle of smoked paprika is not only a fun final garnish, but essential for the best smoke flavor.

FAQ's
You've overcooked the eggs. We've carefully developed this recipe to give you perfectly smoked eggs. It's very important to keep your smoker temperature as close to 200 degrees Fahrenheit as possible.
Any type of smoker will work. You can even use a gas grill with a smoker box for your wood chips.
For the best presentation put yolk mixture in a bag tightly sealed and refrigerated with the white halves stored separately. On the day of serving pipe the mixture into the whites.
Storage
See the FAQ's above about making these eggs ahead of time. While you definitely want to smoke the eggs a few hours to a day ahead the final assembly should wait until the day of serving.
Smoked deviled eggs cannot be frozen.

What to serve with deviled eggs that have been smoked

Smoked Deviled Eggs
Ingredients
- 6 Hard Boiled eggs peeled and refrigerated
- 1½ Tablespoons mayonnaise
- 2 teaspoons sweet pickle relish
- 1 teaspoon brine from pickle relish
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon smoked paprika
Instructions
- Lay eggs on grill or grill mat in a single layer (not touching) in a 200 degree smoker and smoke for 45 minutes.
- Remove from smoker and refrigerate eggs, tightly covered, for 8-24 hours.
- Cut eggs in half and scoop out yolks into a small bowl. Mash with fork until smooth.
- Add remaining ingredients except paprika and blend until smooth.
- Put yolk mixture in a baggie or piping bag and pipe into white halves of eggs.
- Dust with paprika before serving.
Notes
- Prepare boiled eggs using the method in this article but reducing cook time to 12 minutes.
- If yolk mixture is too dry an additional 1-1.5 teaspoons of mayo may be added.
- A small amount of mustard and/or hot sauce may be added to yolk mixture if desired.
- If the smoker temperature varies from 200 degrees F adjust the cooking time accordingly.
